ADAM LONG'S CRAB APPLE BEGGARS PURSE WITH GOLDEN ROD SIMPLE SYRUP - FROM EPISODE 102

PASTRY DOUGH

3 CUPS         ALL PURPOSE FLOUR
1 TSP           SALT
1/4 CUP        SUGAR
1 CUP           BUTTER DICED
3 TBS           COLD WATER

IN A LARGE BOWL, MIX THE FLOUR, SUGAR, AND SALT TOGETHER.  ADD THE BUTTER AND FOLD INTO FLOUR MIXTURE.  ADD THE WATER TO FORM A DOUGH (WILL BE STICKY).  COVER THE DOUGH WITH PLASTIC WRAP AND REFRIGERATE FOR AT LEAST 1 HOUR.

APPLE MIX

8                 CRAB APPLES
1/4 POUND   BUTTER
1/4 POUND   BROWN SUGAR
4 TBS           MINT, MINCED

CORE THE APPLES AND SPLIT INTO 1/8THS.  IN A SAUTE PAN OVER MEDIUM HEAT, MELT THE BUTTER, WHEN BUTTER IS MELTED ADD THE SUGAR.  ONCE THE SUGAR IS DISSOLVED ADD THE APPLES  AND MINT AND COOK UNTIL THEY JUST BEGIN TO SOFTEN.  REMOVE FROM THE HEAT AND COOL IN THE REFRIGERATOR.

GOLDEN ROD SIMPLE SYRUP

1 CUP          SUGAR
3/4 CUP       WATER
1 CUP          GOLDEN ROD FLOWERS

IN A STAINLESS STEEL POT OVER HIGH HEAT, COMBINE THE SUGAR AND WATER AND BRING TO A SIMMER WITHOUT STIRRING.  ADD THE FLOWERS AND SIMMER FOR 30 MINIUTES.  REMOVE FROM HEAT AND COOL TO ROOM TEMPERATURE.

ASSEMBLY

REMOVE DOUGH FROM REFRIGERATOR.  ROLL THE DOUGH OUT TO ¼ IN AND CUT INTO 3X3 SQUARES.  PLACE 1/3 CUP OF THE APPLE MIXTURE IN THE CENTER.  BRUSH THE OUTER EDGES OF THE DOUGH WITH EGGWASH AND FOLD THE OPPOSITE CORNERS TOGETHER AND REPEAT.  PLACE ON A PARCHMENT LINED SHEETPAN AND PLACE IN A 350 OVEN FOR 12-15 MINUTES, TILL THE DOUGH IS GOLDEN BROWN.  ALLOW TO COOL FOR A COUPLE MINUTES, THEN PLACE ON THE PLATE WITH A DRIZZLE OF THE GOLDEN ROD SIMPLE SYRUP.
