PAT MARTIN'S SALT CRUSTED SEA BASS - FROM EPISODE 101

Salt Crusted  Bass

Clean and scale bass, remove pectoral  fins and gills.

Make several diagonal cuts  in sides of fish. Coat with olive oil.

Make  a "bed" of Kosher salt. Place a few sprigs of thyme on bed, then place fish  on bed.
Place more thyme on  fish.

Using kosher salt thickened with  water or egg white, cover the fish completely making a smooth  mound.

Place in middle rack of a 400 degree  oven. Cook for 15-20 minutes or until salt crust is  hard.

Remove from oven. Break open salt  crust to serve.
